Mommy's Pot Roast with Garlic Herb Potatoes


Tender, juicy pot roast recipe for those of us without much time. My toddler can't have the roast, but enjoyed the potatoes and vegetables.

Total time: 1 hour 30 mins
Prep time: 30 mins
Cook time: 1 hour

Ingredients:
-2-3lbs of beef roast
-Lawry's au jus gravy mix


-The Potato Company garlic herb potatoes with seasoning mix

-Onions, chopped
-2 tablespoons olive oil
-Worcestershire sauce
-Seasoning salt
-Pepper

Directions:

-Preheat oven to 400°F
-Heat water in sauce pan. Add gravy mix to water, let boil. Stir occassionally for 1-2 mins. Let sauce cool. Put beef roast in roasting pan or freezer bag with gravy. Marinade in fridge for at least 20 mins.
-Pour olive oil in roasting pan. Add potatoes and seasoning mix. Stir.
-Sautee chopped onions in skillet. Add roast and gravy. Cook for a few minutes on each side, until brown.
-Place roast and gravy into roasting pan with potatoes.
-Bake for 50 mins to 1 hour, until center is pink.
-Let rest for 15 minutes. Serve with your favorite vegetables. (I paired mine with steamed broccoli and carrots.)
