Ground Turkey Cauliflower Enchiladas
Trying to incorporate a little veggies for those picky eaters.
Ingredients:
-2lbs ground turkey
-10 flour tortillas (you can use corn tortillas as well, just fry them in oil for about a minute)
-24oz Enchilada sauce
-1/2 lb cheddar cheese, grated
-1/2lb Monterey jack cheese
-8oz Velveeta cheese block, sliced 1/4 inch thick
-16oz cauliflower rice
-1/4 cup green onions, garnish
Directions:
-Preheat oven 350°F
-Cook ground turkey in medium skillet with salt and pepper until done. Add cauliflower rice. Let simmer until cauliflower is tender.
-To assemble enchiladas, have tortillas, sauce, Velveeta, and turkey mixture ready.
-Use 9x13 baking dish
-Dip flour tortillas in enchilada sauce. Add meat mixture, Velveeta. Roll tortilla like a taquito or open face burrito. Place in dish.
-Repeat this process until you cover the entire dish.
-Add excess enchilada sauce
-Sprinkle grated cheese on top.
-Top with green onions.
-Bake for 20-25 mins until cheese is completely melted.
