Broccoli Cheese Casserole
Here is a slightly different take on a classic, broccoli cheese casserole. Yummy and kid friendly.
Ingredients:
-1lb chicken, cooked and diced
-1/4 cup onions
-1 tablespoon garlic
-tri-color rotini noodles
-1 tablespoon breadcrumbs
-Campbells broccoli cheese soup
-1 cup broccoli, steamed
-1 cup peas and carrots, steamed
-1/2 cup chicken broth
-1/2 cup Grated three cheese blend
-(optional) green onion for garnish
Directions:
-Saute chicken in a bit of olive oil with garlic and onions. Season with salt and pepper. Dice in small pieces
-Steam broccoli, peas and carrots for 5 mins
-Boil pasta for 8 mins until done
-In small sauce pan, heat broccoli cheese soup, add broccoli, peas, carrots, chicken and a quarter cup of cheese. Stir well and simmer for a few mins until hot.
-Pour mixture into medium sized casserole dish, sprinkle bread crumbs and top with cheese.
-Bake for 20 minutes.
