Simple Salmon with Roasted Brussel Sprouts and Yellow Rice

Cooking time: 15 mins

Ingredients:
-3-4 large salmon fillets
-Soy sauce (I use low sodium for my little one)
-1 lemon
-Garlic salt
-Pepper
-Brussels sprouts
-Zatarans yellow rice
-2 1/2 cups of water
-2 tablespoons butter margarine

Directions:
-Place salmon fillets in 9x13 Pyrex dish or roasting pan.

-Season salmon. Squeeze lemon juice over fish. Pour soy sauce and add garlic salt and pepper.

-Add Brussel sprouts to pan with the salmon, season with salt and pepper. Feel free to substitute the Brussels sprouts for your kids' favorite veggies.

-Put in the oven and bake for 15 minutes or until salmon begins to flake.

-While fish is cooking, boil   2 and 1/4 cups of water. Add rice, seasoning mix, and 2 tablespoons of butter or margarine. Bring to boil. Let simmer for 15 minutes.
