Quick and easy Southwest "Salad" Chicken Tacos


This is the perfect meal for busy moms trying to decide what to make in the middle of the week. It's healthy and delicious!

Prep: 15 mins
Cooking: 25 mins

Serves 4 people

Ingredients:

-2lbs chicken breast
-McCormick mesquite chicken marinade packet
-1 diced zucchini
-15oz can of black beans, drained
-15oz canned corn
-Corn tortillas
-1/4 cup of water
-1/4 cup of vegetable oil
-2 avocados, sliced

Directions:

-Heat chicken in large skillet on medium to low heat. Mix water, oil, and marinade mix in a small bowl. Pour over chicken, cover, and let simmer for 15 minutes or until done.

-For the southwest "salad". Sautee zucchini, corn, and beans together in a pan until zucchini is tender.

-Fry tortillas in enough oil to fill the bottom of the pan. About 30 seconds on each side. Pat dry with paper towel.

Here's the fun part!
-Assemble tacos, chicken, zucchini mixture, and fresh avocado.

I like to add a little cheese and salsa on mine.
